Okay Megan this ones for you :) If you take a look at some of these pic there is an example of snack/lunch plates. We eat lots of mixed plates or as my boys call them "snacky lunches".
Heres a quick list and I will post some recipes when I have a min.
So how I think of it is how can I powerhouse any meal trying to add calories and nutrients..Paying attention to try not to incorrectly food combine..which I end up doing all the time. :/
Snack Ideas:
- Nuts-macadamia, almond, cashew, pecan, walnut, pistachio and hazelnut(soaked and dehydrated in our house)
- fruit and veggies-Apple, banana, grape, pear, kiwi, lots of berries (frozen and fresh), a little dried fruit(mostly in our BALLS).
- rice crackers or flax crackers
- lara bars(store bought and homemade)
- smoothies (mostly always with greens)
- homemade granola
- homemade trail mixes
- blue corn chips
- oatmeal bread with hemp protein powder
- fruit leathers
- almond butter and celery with goji berries or raisons
- raw peanut butter cookies (only raisons for sweetener :)
- sunflower seed brownies
- Olives and cheese
- bananas with almond butter inside (like a sandwich)
- Dirt balls-nut butter w/avocado, craisons, nuts, chocolate chips and sweetner of your choice I use honey or maple.then refrigerate.
- I make sooo many different kinds of BALLS in my food processor, I never get complaints. The bottom pic is almonds dried blueberries, dried apricots a date,vanilla and coconut oil. So simple and easy
- Also in pics G.F. english muffins with almond butter, honey and berries (simple)
- Chia seed pudding
Lunch Ideas:
- Oatmeal with nuts, maple syrup, flax seeds, raisins and butter or coconut oil
- eggs with tortillas or eggs with spinach, cheese and olives
- Snacky plates with lunch meat nuts, a veggie and chips (any combo really)
- bean burritos
- nachos W/ beans
- sandwiches
- peanut butter and jelly tortillas
- GF tortilla wraps with turkey and avocado or whatever
- Gf english muffins with almond butter, honey and banana
- buttery noodles with veggies (garbanzos,broccoli, miso, spices and olives)

Thanks for sharing, Abby! always great to get some new ideas! We eat very similar. still working on cutting out gluten all the way. one of my goals for the new year. love the snack balls. ever since you told me about those, we have been making and eating them almost daily. my girls are also huge kale chip fans! :)
